I Let a Smart Brewer Choose My Recipe
I thought I knew how I wanted my coffee brewed.
Then I handed the decision to a machine.
That sounds lazy, but it wasn't. The interesting part wasn't pressing a button and getting a cup. It was watching a smart brewer choose variables I'd normally fuss over myself: grind size, water temperature, flow rate, pour pattern, dose, and timing.
That made this less of a "coffee machine test" and more of a brewing experiment.
For readers already familiar with grind-size basics, this is the next question worth asking: what happens when the brewer, rather than the person, decides how those variables should interact?
I used the current generation of smart brewing technology as the reference point, particularly machines such as the xBloom Studio, which combines a 48 mm conical burr grinder, brewer, built-in scale, Bluetooth 5.0 connectivity, and recipe-driven automation. Its three operating modes—Autopilot, Copilot, and Freesolo—make it unusually useful for testing the boundary between automation and actual brewing control.
The result surprised me.
Not because the machine was always right.
Because sometimes it was right for reasons I would've missed.
I stopped choosing the recipe first
My normal routine is predictable.
Pick the beans. Check the roast. Choose a brewing method. Set the grind. Heat the water. Start pouring. Then, inevitably, start second-guessing everything halfway through.
Too slow?
Maybe the grind is too fine.
Tastes sharp?
Perhaps the water is too cool.
Weak finish?
Increase the dose.
That process works. It also gives me far too many opportunities to "fix" something that isn't actually broken.
A recipe-driven brewer changes the order.
Instead of asking, What recipe do I feel like using?, I started with the coffee and let the machine's recipe system determine the parameters.
That distinction matters.
The xBloom Studio, for example, can load a recipe through its app or NFC recipe card. In Autopilot mode, the recipe can automatically determine grinding and brewing parameters; Copilot lets you modify those parameters, while Freesolo turns the machine into a manually controlled grinder, brewer, and scale.
So I wasn't surrendering control forever.
I was postponing it.
That turned out to be the better experiment.
The first surprise was the grind
Grind size is probably the variable most home brewers underestimate.
Brew Essentials already covers the fundamentals of grind size, including why an overly fine grind can produce muddy, over-extracted results while an overly coarse grind can leave coffee thin and underdeveloped.
The smart-brewer experiment adds another layer.
The machine doesn't treat grind size as an isolated setting.
It is part of a recipe.
A brewer such as the xBloom Studio offers 80 grind settings, with the grinder operating from 60 to 120 RPM. That gives a recipe designer considerably more room to coordinate grind size with temperature, flow, and pouring behavior than a basic programmable coffee maker does.
That coordination is the interesting bit.
Suppose a light-roast coffee needs a relatively energetic extraction. Simply increasing temperature isn't necessarily the whole answer. A recipe can also alter the grind and water delivery, changing how quickly water moves through the coffee bed.
I normally make those changes one at a time.
The machine doesn't have to.
Then it chose the water temperature
Here's where my expectations got uncomfortable.
I'd usually treat something around 90–96°C (194–205°F) as a sensible starting range for many filter-brewing situations. Brew Essentials uses that same general range in its existing recipe content, while the Specialty Coffee Association's brewer-testing framework evaluates coffee using controlled water chemistry, coffee-to-water ratios, grind parameters, and extraction measurements rather than treating temperature as a magic number by itself.
That's the key distinction.
Temperature is only one lever.
The xBloom Studio can set water temperature from 40°C to 95°C in 1°C increments, while its dispensing system can control flow in roughly the 3–3.5 ml/s range and switch among centered, circular, and spiral pouring patterns.
Those numbers sound excessive until you brew the same coffee several ways.
Then they make sense.
A small temperature change can alter extraction. A change in flow can alter contact behavior. Pour geometry changes how water reaches the coffee bed. The resulting cup is the product of all of them interacting.
That's why copying a recipe's "93°C" without copying the rest of the recipe can be misleading.
My favorite part: the machine actually measures the brew
This is where smart brewing stops being a gimmick.
The Studio's integrated scale measures in 0.1 g increments, while the app can record and visualize the brewing process.
That matters because brewing is full of tiny quantities.
Twenty grams versus 21 grams.
250 ml versus 260 ml.
A pour that arrives slightly faster than expected.
Those differences aren't theoretical when you're trying to reproduce a cup.
The Specialty Coffee Association's home-brewer certification framework uses 55 g of coffee per liter of brewing water as its nominal starting ratio and evaluates brewers against concentration and extraction ranges. Its certification process also tests repeatability across multiple machines and brew cycles.
In other words, consistency isn't just a nice feature.
It's something brewing engineers can actually test.
The recipe wasn't always "better"
Here's the part I didn't expect to write.
The smart recipe didn't always produce the cup I'd personally choose.
Sometimes it produced a cleaner cup.
Sometimes the aroma was excellent, but the body felt lighter than I wanted.
And once, I preferred my own slightly more aggressive approach.
That's not a failure.
It's the difference between optimizing a brew and optimizing a brew for me.
A machine can faithfully execute a recipe created by a skilled roaster. It can also give me remarkably repeatable measurements. It can't taste the coffee after I've taken the first sip and say, "You actually want more bitterness here."
At least not yet.
That distinction becomes especially obvious with different roast levels.
A recipe optimized for a delicate light roast isn't automatically appropriate for a dense dark roast. Even the HARIO Hikaru V60 Smart Brewer's documentation takes this approach: its preset recipes are designed around light-roast coffee, with specific combinations of dose, water volume, and 93°C brewing temperature. The documented presets include 18 g/290 ml, 27 g/440 ml, and 36 g/580 ml.
So "smart" doesn't mean universal.
It means parameter-aware.
What happened when I took control back?
This was the most useful part of the test.
I switched from automation to customization.
With a brewer such as the xBloom Studio, Copilot is designed for exactly this middle ground: start with a recipe, then modify it instead of building the entire brew from zero. Freesolo goes further, allowing the grinder, brewer, and scale to operate independently.
That creates a useful progression:

I found Copilot the most interesting.
Autopilot removes decisions.
Freesolo gives you all of them.
Copilot gives you a starting point and then gets out of the way.
That's much closer to how experienced coffee brewing actually works.
The annoying little problems still exist
Smart doesn't mean frictionless.
Bluetooth pairing can be annoying. Apps need updates. Firmware matters. Recipe interfaces change. And a machine with this many parameters gives you more opportunities to accidentally change something you didn't intend to change.
The xBloom Studio support center currently lists firmware releases including V12.0D.122, V12.0D.210, V12.0D.300, and V12.0D.400, along with separate documentation for firmware updates and troubleshooting.
That's a useful reminder.
A smart brewer is partly a coffee appliance and partly a software product.
The upside is that software can add features after purchase. The downside is that brewing shouldn't require troubleshooting a Bluetooth connection before breakfast.
There are also physical constraints. The Studio's water tank is about 946 ml, and its standard design is aimed at individual servings rather than brewing a large batch for a group.
For one or two cups, that's perfectly reasonable.
For six people on a Sunday morning?
I'd reach for a conventional batch brewer.
Did the smart brewer actually improve my coffee?
Yes—but not in the simplistic way I expected.
It improved my process first.
The machine forced me to stop treating every cup as an invitation to randomly adjust three variables. It gave me a baseline. More importantly, it made that baseline reproducible.
That changes experimentation.
If the cup tastes too bright, I can adjust one parameter and compare.
If it tastes hollow, I can investigate grind, ratio, flow, or temperature rather than blindly changing everything.
And if the original recipe tastes excellent?
I can save it.
That reproducibility is also why app-based brewing systems such as GINA remain interesting. GINA's current app connects to its brewer's integrated scale, tracks weight and time, calculates coffee-to-water ratios, and supports saved "brew prints" for later reproduction.
The underlying idea is simple.
Record the variables. Then stop guessing.
Five things I'd check before buying one
Not every "smart coffee maker" deserves the label.
Look for these instead:
Actual variable control — Can it change grind, temperature, flow, or pour behavior, or does "smart" merely mean Wi-Fi?
A real scale — Weight data is vastly more useful than a generic "strong/medium/mild" button.
Recipe portability — Can you save, modify, and reproduce recipes?
Manual control — Automation is useful. Being trapped inside it isn't.
A usable ecosystem — Check app support, firmware updates, operating-system compatibility, and what happens if the app disappears.
That last one gets overlooked.
A clever machine with abandoned software can become a surprisingly expensive paperweight.

Can a smart brewer really choose the best coffee recipe?
It can choose a technically coherent recipe based on programmed parameters, coffee characteristics, or a roaster's recipe. It can't guarantee that recipe matches your personal taste. Think of it as an expert starting point, not an objective definition of "best."
Is a smart brewer better than a V60?
Not automatically. A V60 gives you direct control and very little technological overhead. A smart brewer adds consistency, measurement, programmable flow, and repeatability. If you enjoy experimenting by hand, the V60 may remain more satisfying.
Does grind size still matter with an automated brewer?
Absolutely. Automation doesn't eliminate extraction physics. It simply controls the variables more consistently. The grind still affects flow, contact time, and extraction.
Do I need an app to use a smart coffee brewer?
It depends on the model. The xBloom Studio, for example, can be operated through physical controls, although its app provides deeper recipe creation, saving, sharing, and monitoring capabilities.
Is smart brewing worth it for beginners?
It can be, particularly if you're frustrated by inconsistent results. A recipe-driven system gives beginners a repeatable baseline before they start changing variables. I'd still learn what grind size, ratio, temperature, and extraction mean, though. Otherwise, you're operating a very sophisticated black box.
The recipe I'd actually keep
After letting the machine make the decisions, I wouldn't go back to completely hands-off brewing.
I'd use automation differently.
Start with the smart recipe. Taste it. Change one thing. Save the result.
That last step is the part worth stealing, even if you never buy a smart brewer.
Coffee gets much easier to understand once yesterday's good cup isn't trapped in your memory as "something like 20 grams, maybe 300 ml, and I think I poured twice."
Give every good brew a recipe.
Then let the next cup argue with it.
